Uncle Hemmy’s loaded potato salad
3 pounds of baby potatoes
2/3 cup mayo
2/3 cup sour cream
2 tablespoons 1908 dill pickle wing rub
2 tablespoons fresh chopped dill
5 boiled eggs
1.5 cups shredded cheese
1 cup bacon bits
3-5 jalapeños seeded and chopped
3-5 big dill pickles quartered and chopped
1 tablespoon dill pickle juice
1 cup of sliced green onions
Cut potatoes in to bite size pieces about 3/4 inch, then boil for roughly 13 minutes or until fork tender
Boil eggs for 12 minutes then immediately transfer them to an ice bath, this helps peel them
Separate the boiled egg whites from the yolks and set aside
Add mayo, sour cream, fresh dill, 1908 dill pickle seasoning, pickle juice, egg yolks in to a blender and blend smooth, then refrigerate
Let potatoes cool. Once cool add pickles, jalapeños, bacon, egg whites, and cheese to a large bowl.
Pour in dressing and mix it up! Place this on to a baking sheet and set it on the smoker at 250 until you start to see it look like this.
Garnish with green onion and serve !

This looks awesome. Just one technique I’d like to suggest: steam the eggs for 12 minutes rather than boil (if you have a steamer basket). I am at near 100% hassle-free peeling since I moved to this method.
Edit: Wait to set the steamer basket and start the timer once the water is boiling.

This looks so damn good. Quick question, do you find that smoking the entire product dries things out a bit? Would it be beneficial to smoke the potatoes then mix them with the rest of ingredients once smoked? Would love your thoughts

I do something very similar but with baked russets. 4 lbs. also have dill relish in mine. But pretty similar to what you got going on.

Potatoes are pickled in malt vinegar, smoked, then smashed, fried, and served with a delicious lemon/anchovy aioli.

I like this idea but I feel like just smoking the potatoes (and maybe a few other ingredients) and then adding in the cold stuff would work better.
